When I was a kid, my mom had a wonderful garden. One of my favorite things she would grow was cucumbers. Homegrown cucumbers are the absolute best. Then my mom would take those fresh cucumbers and make the most amazing homemade pickles.

I have always wanted to make my own pickles and re-create that childhood memory. The issue is . . . I kill everything I try to grow. Also, I know nothing about canning.

A couple of years ago, I came across a recipe for overnight pickles and have been making them ever since. They taste just like fresh canned pickles. This is an easy recipe that takes about 20 minutes from start to finish, and then you pop them in the fridge overnight. The next morning you have fresh pickles. It’s that easy!

Most pickle recipes are pretty similar, but here’s the one I like best from the Stay at Home Chef.

  • 1 English cucumber
  • 1 1/2 cups white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon Kosher salt
  • 1 teaspoon whole black peppercorns
  • 3 cloves garlic
  • 3 sprigs fresh dill (you can use a tablespoon of dry if you prefer)
  • Slice cucumber into chips or spears. Add cucumber, peppercorns, garlic cloves, and dill to a 16-ounce Mason jar (any air tight container will work).

Combine the vinegar, sugar, and salt in a small saucepan and bring to a simmer. Then remove from heat. Pour mixture over the cucumbers.

Once cooled, cover and place in your refrigerator overnight. If you like spicy pickles, you can add a sliced jalapeño or a tablespoon of red pepper chili flakes. Fresh green beans, okra, and cauliflower also pickle well with this recipe.
