A few years ago I was perusing Pinterest for healthy slow cooker meals and stumbled upon this chicken recipe, which has become my go-to when I don’t know what to cook for dinner or don’t have time to cook. I make sure I always have at least the majority of the ingredients on hand so I can dump everything in and go! So far, everyone I have made it for has liked it, and I hope you will too!

Seasoned Chicken, Potatoes, And Green Beans

Prep Time: 15 minutes (if that)

Cook Time: 4 hours on high

Ingredients

2-3 Boneless Skinless Chicken Breasts

~2.5 cups whole green beans (I use frozen and put them in without thawing them)

~4 cups of potatoes (I use baby potatoes and cut them in half. You can dice potatoes if you have time.)

1/3 cup lemon juice

1/4 cup olive oil

1 tsp dried oregano

1 tsp salt

1/4 tsp pepper

1/4 tsp onion powder

2 cloves of garlic, minced

Place the chicken breasts into the middle of the slow cooker first. Then pile the green beans and potatoes on either side. It’s ok if things overlap. Whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic in a large measuring cup or something easy to pour from. Pour the mixture over the contents of the slow cooker. Cover and cook on high for 4 hours. That’s it!

One side note about the “sauce.” You may need to adjust the amount of lemon juice depending on your personal taste. I find I have to make a little extra “sauce” because I have a large slow cooker, and I don’t add much more lemon than the original recipe calls for.
